Monday Meal Plan

Just popping in to post my meal plan for the week and to update you, I did run the 9km bridge run yesterday and my body held up well, check in tomorrow for some photos and a full update!

Monday: bacon and broccoli pasta bake
Tuesday: beef pho (recipe below)
I will attempt to get the girls to try the noodles and the beef but most likely they will have left over pasta bake. Still, I persevere!
Wednesday: beef stroganoff and rice
Thursday: sesame crusted salmon with steamed bok choy and rice
I won’t try this with the girls, not quite yet. Its dancing night so I will whack some fish fingers and jacket potatos in the oven when we get home, Ron will cook our salmon on the bbq after the girls are in bed.
Friday: homemade pizza before little athletics

Lightning Liz’s Chilli Beef Pho.
200g dried rice stick noodles
2 long red chillis
6 cups (1.5litres) beef stock
1/4 cup lime juice
1/4 cup fish sauce
1 tbs caster sugar
1 cinnamon stick
2 star anise
150g snow peas halved lengthways
150g sugar snap peas halved lengthways
400g lean beef fillet (frozen so you can thinly slice it then defrosted)
2 green shallots thinly sliced
1 cup bean sprouts
fresh basil leaves
Instructions:
Halve one chilli and put it in a saucepan with the stock, lime juice, fish sauce, caster sugar, cinnamon and star anise and bring to the boil, simmer for 10 minutes. While this is simmering, cook the noodles in salted water, drain and set aside. Add the sugar snap peas and snow peas to the broth and cook for 1 minute. Discard the cinnamon and star anise. Thinly slice the remaining chilli and divide the noodles between two bowls, add the beef and chilli and then pour the stock mixture over. Garnish bowls with shallots, bean sprouts and basil.
