Homemade Christmas gifts – fudge

1 x 395g tin of condensed milk
150ml milk
450g Demerara sugar
115g butter

You will need a large pan, a sugar thermometer, a stand or electric handmixer and an 8” square brownie tin, lined with baking paper. Also be prepared to stir your fudge mixture for about 20 minutes without stopping so this is something best to do while small children are otherwise occupied, you do not want to take your attention off the mixture for even a second otherwise it will burn and ruin your whole batch!

Put condensed milk, milk, sugar and butter into a large pan, you need enough room for the hot mixture to bubble up while cooking. Heat over a gentle heat until the butter melts and the sugar dissolves.

Stir continuously, I used a large spatula and made sure to stir gently in circular motions making sure to lift the sugar mixture off the bottom of the pan.

Increase the heat a little and stir until the fudge mixture starts to bubble, its important not to heat too quickly because at this point it will start to stick.

Your sugar thermometer should be immersed in the mixture, once it starts to bubble and simmer you need to heat the fudge to 116 degrees C or soft ball stage. This should take about 10-12 minutes, make sure you continue to stir all the time!

When your mixture reaches soft ball stage, remove from the heat and transfer to your stand mixer. Beat at a high speed for about 10 minutes, this is what makes your fudge creamy and delicious!

At this point you could add some other ingredients, a splash of vanilla extract, a cup of chopped chocolate, some rum and raisins but I preferred to leave mine plain. Once your mixture has lightened and cooled a little with all the air beaten into it, pour into your lined tin, smooth over and leave to set at room temperature. Do not put it into the fridge. Leave overnight and then cut up into fudge sized pieces!
