I have had a busy morning. Ethan is here for an extra day while Mum Julie works plus it was my turn to do morning tea at playgroup so I was up before 7am with a cup of coffee putting on the lamb roast in the slow cooker and whipping up something delicious for morning tea while taking care of three children. I feel exhausted just typing this!

So, I needed something quick and delicious to make and take and this recipe from Kate at Picklebums seemed like just the thing! Sure enough they were absolutely delicious and everyone enjoyed them, including Amy which I thought was a bit suprising. I will definitely be making these again! Thanks Kate!

Raspberry oat bars

*1/2 cup brown sugar

* 1 cup plain flour

* 1/4 tea spoon baking soda

* 1 cup rolled oats

* 1/2 cup butter cold
* 1/4 teaspoon of cinnamon

* 1/2 cup of jam (I used raspberry jam)
* 1/2 cup of berries (I used frozen raspberries slightly defrosted)

Preheat your oven to 180 C and line a slice tray with foil
and lightly grease.

Combine the butter, flour, sugar, baking soda and oats in a
big bowl and using your fingers rub in the butter till it makes a nice oaty,
crumbly mix. Press about 2 cups of the mixture firmly into the bottom of the
slice tin. Cut up your berries in to smallish bits or in the case of
mullberries just smoosh them up a little and mix them with the jam to make it
extra fruity, then spread the fruity mix over your base. Add the cinnamon to
your remaining mix and then lightly press it over the top of the jam.

Bake for 35-40 minutes or until lightly browned. Don’t over
bake – it’s better slightly under done than over done! Cool completely before
